Dear Vi,

I work at a fairly expensive American chain steak house. Frequently tour groups come into our restaurant from various countries around the world. In their countries the service charge is calculated into the final price of the check. But here it is not. Our restaurant does not add a service charge to any check, so frequently I am left penniless after caring for up to 20 guests. How do I tactfully tell customers from other countries the service charge is not included in the bill total?

Dear David,

There are several checkpoints in this situation where the issue of gratuity could be discussed. Firstly, the tour company should inform travelers the gratuity is not included or insure the tip is accounted for. Secondly, the restaurant's reservations policy should include automatic gratuity for any parties over 6 or 8. This eliminated the waiter's need to inform the guest "sans servi." Show this column to your manager. Hopefully, s/he will see your perspective.
