I was wondering if you have any ideas on how to educate the consumer on the proper amount to tip, besides the one of berating the under tipping customer.

Fifteen percent is considered an average tip. Although most people leave 15% after taxes, don't be put off by those calculating the tip before the tax is added to the bill. For good service, 18%-20% is common, but don't expect it. When I receive poor service in a restaurant I leave 10% with a note on the check stating the service was in adequate. Your question, however, is how to let customers know that 15% is expected. How about letters to the editor, food critics or restaurant reviewers of your local paper calling attention to the shortsightedness of some restaurant patrons? These writers owe it to the waiters of America to print more about the job of the waiter in the restaurant.
