Great restaurants are now popping up all over the globe. Top chefs need great servers. The problem is cutting edge restaurants are usually small and don't have advertising budgets.

A number of national guide books are available to help zero-in on the job hunt. Start with the James Beard Foundation Directory (212) 777-4219 or Zagat Surveys (800) 333-3421.

Prepare a resume. Make a phone call. Find out what the hiring process is and follow it! Don't be surprised if a tryout performance is required. Many restaurants today define their "style" of service and want servers to match.
