Do you know anything about an international exchange program for chefs? I've heard of it but can't seem to gather any solid info.

I could find no organized international exchange program, but I have a few suggestions: The Relais et Chateaux is an international group of privately owned and operated hotels and inns offering sophisticated accommodation and dining. There are more than fifty properties in North America and Canada, hundreds in Europe and Asia. The properties proudly claim a strong bond around and among themselves, frequently exchanging staff. You must contact the properties directly. A catalogue is available from Relais et Chateaux, 11 East 44th Street, Suite 707, NYC, NY 10017. There is a $10 shipping and handling fee. Another source of information is the American Culinary Federation in Sarasota, Florida.
