I live close to the Mediterranean and roasting peppers is very common. The harvest really comes in in late summer and you can buy them by the absolute sack-load. People buy tons of them because the season is so short and they want to stock up their pantry (or freezer) for the winter. Sure, you can buy greenhouse grown ones all year round, but they are vastly inferior to those grown outside in season.

They then spend a weekend roasting them, using pretty much the technique you describe. Then they freeze them, again, just like you describe. Or they make a kind of relish called 'ajvar' (Google it, it's quite hard to explain), which doesn't need freezing, it's put in jars. The aroma is SO recognizable and fantastic, but unusual if you have never smelt it before. It fills the air here in late summer! Nothing like raw peppers, I can assure anyone who has not tried them!

One of the things you can do with them is basically make a salad - make a simple dressing with olive oil, vinegar/lemon and garlic, pour over the peppers (sliced into strips) and it is OUT OF THIS WORLD!!
