Snickerdoodle success!!

I am so excited that my snickerdoodle cupcakes were tasty, and I am also so happy that I had extras to share with friends.
The original order for these cakes was made by my friend (and fellow knit pistol) for her booth at the EWE  here in State College. She wanted something that would appeal to the masses, but also was a little out of the ordinary. I thought putting a cookie on top of a cupcake that tasted like a giant snickerdoodle should do the trick. I mean come on now, who doesn't like snickerdoodles.
I found a bunch of recipes online for each piece individually, but nothing that had all the right stuff. So I started throwing things together,...and voila!

I am going crazy wondering if they were a hit at EWE with Sue. I am crossing my fingers.
I did get a photo of their table, and they be looking good!

I have to tell you how funny it is that she wrote a note saying that they were real. haha. So cute!
Anyways...here is the recipe for the main cupcake part

Feeling a little romantic

I felt like making cupcakes, but I also was really interested in eating some chocolate covered strawberries. I found this great recipe online and then of course did what I do best,...adapted it to be my own. I made a cupcake out of some of my fresh strawberries that I macerated overnight. I also used the same strawberry puree in my frosting. Instead of using a ganache or a chocolate frosting, I put straight up chocolate on top of my cake, this made for a slight crunch, like a real chocolate coating!
I will be surprising my office mates later this afternoon.

I made these for my sister in laws baby shower. Don't they look good enough to eat. The decorations went over really well....the fact that I tried a "healthy" cupcake,...didn't.
Oh well,  you can't win them all.

I made these for my last day of summer IST classes. I got the inspiration from a picture I saw online and added a few of my own.
Hey,....maybe I'll get extra credit.
