I felt like making cupcakes, but I also was really interested in eating some chocolate covered strawberries. I found this great recipe online and then of course did what I do best,...adapted it to be my own. I made a cupcake out of some of my fresh strawberries that I macerated overnight. I also used the same strawberry puree in my frosting. Instead of using a ganache or a chocolate frosting, I put straight up chocolate on top of my cake, this made for a slight crunch, like a real chocolate coating! 
I will be surprising my office mates later this afternoon.

Absolutely delicious! Great strawberry flavor, and the crackle of the dipping chocolate was a wonderful touch. Just like on a real strawberry! Could I get some chocolate dipped little kisses of that icing? It tasted so much like fresh strawberries...
These were great. I gave one to Molly this afternoon and she loved it, especially the icing.
