Angel cakes with homemade lemon curd

This was a request from Gary, and boy oh boy, was it a delicious one. Instead of using the raspberry filling, I made fresh lemon curd from the all of the yolks left over from the angel food. These little cakes are fat-free and only 150 calories. Yum!
