I had no idea what hummingbird cupcakes were until I made them yesterday. All I knew was that they had bananas and pineapple in them. Which I learned from reading the recipe. I actually ate one of these (rare...since I never eat what I bake), and it was amazingly fantastic. It kind of tastes like the best banana nut bread I've ever had,....with icing.

This creation was a Gary request, and a labor of love. I used as many organic and good quality ingrediants as I could, and on the same note, I think I used every bowl in my house. I am excited to hear if people enjoyed them. Here is a link to the recipe, again I altered it a little bit but.....
I was craving chocolate like no other and needed something quick. These really hit the spot, and I only needed 1 or 2 to get my fix.
My cookies looked nothing like picture that came with the recipe, but, that is usually the case with me anyway. Here is the recipe if anyone gets a strong chocolate attack.
I am quite pleased with the way that this cupcake came out. The recipe said to fill them 2/3 of the way full, but they didn't rise enough to meet the top of the paper. I would probably go 3/4 next time. Other than that, I am happy. Here is the recipe if anyone is interested. I altered it a bit by using lower fat ingrediants and substituting pecans for almonds (its what I had).

I varied it slightly by adding toffee chips on top. I liked the crunch. The cupcake was pretty good, really rich chocolate flavor, but I forgot to spray the inside of the cups with Pam, and therefore had to destroy the cupcake in order to get it out. The icing had a wicked bad butter flavor. Everyone else that tasted them didn't mind, but I absolutely hated it. Never again!
