1/7/09 A Keeper!

Well, it was awesome- it is from the Pampered Chef Cookbook 29 min or less.. and I hate fish- so for me to love it is a big deal. I only made one "mistake" I mixed the Asian seasoning in with the Panko breadcrumbs instead of having it by itself, it really didn't matter. And instead of placing on a cookie sheet I made the fillets in a non stick skillet with 2 tablespoons of Olive Oil that made them nice and crunchy.

I made Rice as well- I added 2 teaspoons of sesame oil to the rice as it was boiling, hoping to add a little more flavor.

Sesame Tilapia, Veggies and RIce

Recipe:
1/2 Cup Panko bread crumbs
1 Tbsp Sesame Seeds
1 Egg
8 oz of Tilapia Fillets
3 Tbsps Asian seasoning Mix (pampered chef brand)
2 Tbsp Oil
Mix Bread Crumbs,sesame seeds. Lightly beat eggs, Coat eggs with Asian seasoning mix, dip in egg then into Panko mixture.

Place on Lined Cookie Sheet and Bake at 400 for 25 to 35 min till browned.
Make rice according to directions and serve either over the rice or as a side

So all in all this recipe is a keeper!

We also got a load of laundry completed ... Again!

I am thinking of getting a list of all the new recipes I plan on trying and posting them, more on that later- I will probably post that tonight....

1/6/09~ Another Day Another Challange

So - Last night I made our hamburgers and Homemade French Fries- the family scarfed that down, hopefully tonight the Tilapia will get scarfed down as well. We shall see. I also did 2 loads of laundry last night- even Brian said " Are both these baskets clean?" Like I have never done laundry before LOL.
I have been using craigslist too- to declutter I must admit it is effective! Getting rid of junk and cleaning out the basement that someday may actually fit a vehicle in it is a good incentive, not to mention making a little moola in the process. It is easier than a garage sale and more productive than donating it- although my rule is list it twice on Craigslist then if it is not sold, give it away of Freecycle. No sense it keeping it around!.
I am kinda on a roll with the decluttering and keeping the Laundry under control. I am glad, I am not searching for clothes at 530 am .....

1/5/09 Back to work or is it the "grind"?

I am not sure which it is to be honest, I am glad to be back to work, to feel some sort of routine again. I felt bad for the kids since they looked like zombies this morning- at least they will fall asleep fast tonight!
Tonight for dinner we are having our hamburgers and homemade french fries.. along with baked beans and a veggie.
I am also going to do another load of laundry. I need to do an inventory of the upstairs freezer and the basement large freezer, I know I have whole roasting chickens and a ham down there and who knows what else. But it needs used.

I need to come up with a menu plan involving things out of the freezer.

Frugally I need to clip my coupons as well, but I fear that Twilight will get the better of me tonight. I need to finish that book before Lost starts in a couple of weeks. I can't be having the whole Bella/ Edward and Jack/Sawyer thing running thru my mind at the same time... one interesting thing at a time in my feeble brain.

So, I didn't get a whole lot done today,

other than shop and read Twilight. I asked for that book for Christmas, I am a reader and I love frivolous reading, I was assuming Twilight was just that. Brian and I had a 20 dollar limit on each other and I knew Sam's Club had that book for 4.88. That seemed to round out my preapproved list of things I wanted for Christmas..
(yes I said preapproved, otherwise I am risking ending up with a sweater with Santa on it bless his heart)...
I am almost 3/4 of the way done with it and wow-(I can admit I will be at Sam's getting the next in the series this weekend. after I finish this one and go see the movie~ alone since Brian said " I am soooo not goin to see that movie") I love it- I forgot how much I love vamps! Like totally love Vamp stories, movies any of it... how can anyone be afraid of Brad Pitt, or Lost Boys? Now this Edward Cullen.... I am so not wanting this book to end, thank heavens that there is more than one story in the series. I know it is all so pop culturey (is that even a word?) that most bibliophiles are gasping at my love of the book..... but you know what? I love it. BTW don't forget that LOST is starting this month... Amen!

I got laundry done today too, so all was not lost I also got my closet cleaned out... the bottom (shoes and purses) and the upper shelves (pants) not the actual hanging clothes, that is a saved for a day with more energy or madness.. I am not sure which.
But I did not make the ribs~ I forced the Boys to have left overs.... Brian made a face, but he lived.

OKay so the 5 yr old still wears a pull up to bed, actually not anymore- that was his New Yrs resolution.... Good thing mine was to do a load of laundry everyday...

In reality he makes it dry 6 outta the 7 nights a week, that doesn't justify buying those expensive nighttime pullups in my world. So today I shall do more laundry! Which is fine. We redid the laundry room overbreak so as sick as it sounds~ I actually like being in the laundry room now.
It has our wonderful frontloaders, our antique shelf with out sheets organized on it, the nice antique dresser that I can fold the clothes on before I bring them upstairs...... it is all good-
I hope this last all year! Since it is a resoultion, it has the unfortunate odds of not lasting, but I am going to try my hardest!

Okay, I realize most people do a menu plan for the week, starting Monday ending Sunday. I am not doing that this week, I want to get my Menu down Saturday to Friday. Since I have the time right now, I am doing it right now.....

Saturday 1/3/03~ Left Over Ham Potpie and/or Left over Pork and Sauerkraut
Recipe:

Ham Potpie:

Cook ham bone in water to make broth, skim off fat and add the meat pulled from the bone. Season with salt, pepper,and a bay leaf. bring to a slow boil. Add sliced carrots, celery and potatoes. You will have to eyeball this depending on how much broth. Add the pot pie and cook at near boil for 20 minutes or until pot pie is cooked through.

Pot pie dough
3 eggs,slightly beaten
1/2 cup milk
1/2 tsp salt, more or less to taste
1/2 tsp baking powder
flour to make a stiff dough

Roll dough to 1/4 in thickness and cut into squares( a pizza cutter works great for this)You can be generous with the flour when you roll as this will thicken your broth a bit. Drop squares of dough into hot broth stirring after adding every 12 pieces or so to prevent sticking together.
This will puff up quite a bit so be sure you have enough room in your pot.

I usually have either a Ham Hock or even just pieces of a Ham steak if the Boys "need" the potpie that night for dinner
If it is the ham hock - or hambone- i put it in a stock pot with water LOTS and /or chicken stock, add any veggies and seasonings you like- I added celery seed, pepper, salt, lots of chicken bullion, sometimes Bells seasoning.. I just keep adding and tasting ...
Plus i know the recipe looks like you will have too much- but you don't! i have made this for me DH and the two little ones and have only had enough left over for DH to take to work not me

I have made these noodles with Chicken too - same theory

I can not tell you how many times my Brian has bragged about "my ham potpie"

Ribs in the Crockpot with BBQ Sauce
Recipe:
I think that what I am going to do here is just defrost the ribs I have in the freezer, and place them in the crockpot with a Bottle of BBQ sauce on low for 6 to 8 hours More than likely the Sweet Baby Rays brand I have in the Cupboard.

New Recipe Alert!!!!!!!!
Korean-Style Beef Bowl with sesame noodles

recipe:
2 green onions with tops
1 lb skirt steak
2 cloves garlic pressed
1 tbsp sesame oil
3 Tbsp soy sauce
1 tsp coarse black pepper
1 tbsp sugar
1 tsp oil
for the steak and marinade, slice the green onions and add to large mixing bowl.Cut the Steak in thin slices against the grain. Add to the mixing bowl. Add the pressed garlic,soy sauce, Sesame oil, black pepper and sugar and mix well. Cover, place in fridge and make noodles
bowl spaghetti noodles~ any kind you have... once done, drain and then add soy sauce and sesame seeds. Toss to coat.
Remove steak from marinade, brown steak in non stick pan in oil in a single layer turning once making sure meat is no longer pink inside.
serve with or over noodles.

Thursday 1/8/09:
Spaghetti with Garlic toast and corn
Once again- not very original... but- the last 2 recipes who knows how the family will react, I better choose an olde stand by!

Okay~ This is a new year, new beginnings right? Well I am making the plunge to vow to make a post everyday, I don't care if noone reads my blog. LOL I am posting. I want a blog. and I want to be up to date with it - it is shameful that I have not taken the time to use this web space that PSU has given me.. Honestly.
What are your resolutions?
Mine? you ask?.

No Dirty Laundry that is right, I said it~ no dirty laundry ~this means doing at least a load every other day. I am determined though, I have contemplated buying all new socks for the entire family just so I wouldn't have to deal with the 65 pairs of dirty ones... Well no more- I am doing a load every day if not every other day.

Make one new recipe a week~ this madness of coming home every night and Brian and I lookin at each other like the crows on "The Jungle Book" "What do you want to do ? I don't know what do you want to do?" Minus the English accent -(which would make it much more comical in my book) for 15 minutes is wasting precious laundry time....having a larger pool of recipes to pull from is going to help this leads me into my next one...

Making a Meal Plan~ I have no excuse to not have dinner, I have a jelly cupboard filled with cookbooks labeled "29 min till dinner" and " good for you" and of course all the Martha books... there is NO excuse to not be prepared!

I am going to attempt to post these things. The meal plans, the new weekly recipes, the laundry this will all be more willingly done because my core really wants to be frugal... having a meal plan, not buying new clothes cause too many are laying in a heap, and trying new recipes as opposed to go a resturant, will save money too!
So I hope to keep postin away!
and of course this will be motivated by the fact that I will save money and these days isn't that what we all want????

Way tooo Long

Okay I know I haven't written anything in a loooonnngg time- since like June. But I am sure noone has really missed my posts have they? I don't get many comments :) Anyway, is it just me or did Summer just kinda poof into thin air? August has been kind of a haze, our youngest was very sick and then we had a family reunion which involved a spagetti eating contest then Ag progress days (heaven forbid we don't go out and look at the cows!) now all the sudden, we have Labor day!
Oh well- I love Fall the food the weather the planning for the holidays.
I thought that I would post one of my favorite side dish recipes, I use it all the time and the kids and B love it:

Homemade Rice a Croni
(i didn't want to rip off the rice a roni thing....)

1 1/2 cup of rice
enough broken spagetti pieces to make a cup
4 cups of water
1 tablespoon of butter
2-3 tablespoons of soupbase or 2-3 bullion cubes
dehydrated soup greens if ya have'em (I get mine in belleville at Peights.. although I started making my own with the abundant tiny green peppers from the garden)

Melt butter in large frying pan and saute the rice and noodles until they are slightly browned on meduim heat, stir these alot- don't walk away from them either- they burn fast and then you will cry that you wasted all that good rice! Turn the overhead fan of your stove on high (just do it) Once the rice and noodles are browned, slowly pour in the 4 cups of water and add the soupbase or bullion, see aren't you glad you turned on the overhead fan? it smokes up and sizzles pretty good at that point... Ok now bring it back up to a simmer for about 10 minutes or so, turn down to low and put a lid on it for atleast 15 -20 minutes you can check it to make sure it hasn't burned thru all the water, but 4 cups shoud be fine.
I serve this with chicken normally but last night we had steaks on the grill and it was just as good.

I am gonna try to keep up with this blog thing- I have been reading other blogs across the web and man they are involved!

Did YOU do anything exciting in school today?

Anyone who knows Brian and I know that we were not the “Hardcore” straight A students, I am not sure about Brian cause he is older than me and went to a different high school, but me? I went thru high school with C’s and B’s yes I had the occasional A but … they were hard earned, not easy for me in the least. Usually I got an A in fitness or gym.

Some how Max has ended up with straight A’s for all his 7 years in school (yes I counted Kindergarten) I am grateful for this, because in all reality if I had to help him with his “connected math” homework, there would be tears shed and not from him.

What I have learned from this is I need to ask him constantly

“How was school today?”

“What did you do in school today?”

“Did anything exciting happen at school today?” Brian says it is over kill some days “Leave the kid alone he would tell you if something exciting happened” he says to me.

Well, I beg to differ so far from that question I have learned:

He won an essay contest for a paper titled “What my Family Means to Me”

Apparently we mean something but not enough to brag that he won something. A week after he won....

He won the Maroon and Grey award last quarter.. oh and by the way can you frame this certificate that has been floating in-between books in my backpack?

He won and Honorable Mention for a Creative Writing contest, “Which is a really big deal mom” Big enough deal that he actually told me only 48 hours after he received it.

He owes Danielle 4.80 for lunch money he borrowed, and I only have .14 cents in my lunch account. (this is literally as I walking out the door from my mother-in-laws where I drop him off to get the bus, which better than the day last fall when he told us that he lad lost the 50 dollar check we gave him for lunch as we were pulling out of the driveway in the morning, so could he have 3 bucks to eat)

He had to have a light blue shirt for field day.. Today in like 5 minutes before we all get in the car to leave for the day.. hmmm guess you are wearing a aqua tie dyed Chicago t-shirt for field day.

That child is going to win the Nobel peace prize and it will be Connie Chung that tells Brian and I on the evening news…………..

Loreal', Lost, and Awesome Oatmeal Cookies

Why did I spend 13 dollars on a bottle of peroxide you ask? Because for a brief moment of insanity I thought that a box of highlights in this decade would be more sophisticated than a bottle of peroxide……Friday night, we went to Walmart… why wouldn’t we? It is payday and isn’t that what ever American does? I decided I should save some money and give myself my own highlights. I am a bargain shopper and it doesn’t take a genius IQ to figure out that 13 dollars is much cheaper than 99 percent of the hair salons in Centre County. Needless to say, after 2 hours (yes two hours) and 13 dollars, I look like a Pumpkin. So- the box reads “Anti-Brass Formula” means, “There is no chance in Hades that you are going to look as good as the girl on this box”. I now have an appointment with an actual Beautician that went to school for this crap, who insisted over the phone that “ Oh I can fix that easy, you just need some toner” on Thursday. I am sure it will cost more than 13 dollars, and quite possibly take more than 2 hours. There is an upside to this, which takes me into my next train wreck of a thought process… I won’t miss Lost if it does take more than 2 hours

If you missed the season finale… don’t read anymore! Okay- first off, how insane was that “moving of the island scene, I wondered how they were going to show that without being cheesy; I think they pulled it off though. One question, where did Daniel and the dingy end up? Were they still out to sea? Did they make it back before it moved? I am a freak, I get into shows entirely too much, and I need to know these things! Normally I am not a Locke fan, I think that he is a good character, but I never really was that into him, but when he is watching the tape down in the Orchard station, I actually laughed out loud when the Dharma guy in the instructional video explicitly states “You must never place anything metal in the whatever it is( I can’t remember what it is called)” the look on Locke’s face when he realizes Ben is placing every thing metal that is not nailed down in the area is awesome. That wackjob bad guy whatever his name was really creeped me out I honestly don’t care that the boat blew up – I am glad Ben killed him he was giving me nightmares. I also forgot all about Penny, so THAT was Penny’s boat huh? That was pretty cool; I was getting worried since I knew that Desmond was not one of the Oceanic Six how he was going to make it off that island. Anyway- now we wait as usual, I don’t wanna wish 6 months away- but I cannot wait for the season premiere…

Now- for the good stuff. I made these oatmeal cookies this weekend…. OMG they are literally the best oatmeal cookies I have ever had!

INGREDIENTS

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats

Directions

In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, and then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Now I did not add any raisins or nuts or anything like that – I think that I added more than the recommended cinnamon, I love cinnamon. Plus for about 12 of them I made a little divot in the middle when they came out of the oven and put a dollop of raspberry spread in the middle- those rocked!

The Road To Nowhere

Last night as I was trying to get the boys to brush their teeth, I noticed Max (the older one) was following right behind me.. I looked for Connor (the 4 yr old) I could hear him, but not see him. He was "army crawling" thru the hall. I said, "What in the heck are you doing, get up and go into the bathroom to get your teeth brushed." His response? "I'm on the road to nowhere" Okay I am a sucker- an easy mom to say the least and this of course made me start to laugh - belly loud laugh .. what 4 year old thinks they are on the road to nowhere? And how do you respond to this? "Mommy is on the road to nowhere too, get up and follow me" and of course he did! Since this is a blog and it is my blog I can write about all the boring things I want about my kids and how cute they are.. and get away with it. Connor is the comedian who insists on wearing a batting helmet while sitting 4 inches from the TV watching the "Suite Life of Zach and Cody" which I HATE....
I have a meeting to go to- the "road to nowhere".... I will blog more later

Okay I am I sure there is a limited number of people who know what those numbers are.. same as I am sure there are a limited number of people who understand my insane couponing or burning desire to create my own hamburger rolls when they are only 99 cents at Weis.. but for anyone who does "get" those numbers - you know that tomorrow night we will be going thru withdrawals since there is no LOST :(
I will be able to get some stuff done- clean out a cupboard, do a load of laundry, read some of the latest book I am tackling.. actually I am tackling 2 "Christ the Lord" by Anne Rice and "Son of a Witch"- same author who wrote "Wicked". I used to read allllll the time, now the older I get the more it becomes a luxury. I love books, the stories the ideas, how when it is a really good story - you cannot wait to get to the end, then mourn the end because you can not spend time with the characters. That is what Lost is like, if you like to read and become totally lost (no pun intended) then that show allows you to do that for one hour a week... a luxury. Next week it is 2 hours and I can not wait. I am gearing up now figuring if I walk the kids home from their respective daycares, they will be fast asleep by 9 pm. Which I am pretty sure won't happen- but I am prepared to feed them Turkey with a huge glass of milk to get them groggy and quiet. I am only kidding.......

Also - I managed to go to the grocery store this week and spent 15 dollars for 54 dollars worth of stuff... that makes me feel like a productive mom!

Couponing....a work in progress

I admit it- I want to be the "Coupon Princess" I never really was fond of the term "Queen", Princess just sounds prettier... and sometimes I am really that shallow! Anyway I am planning on trying to outline in this entry "how" I coupon. What to do, how to start, where to find them...any tips I can come up while sitting here typing....I have another entry on my blog that does somewhat explain some of this stuff, but I think that this will be a little more indepth...

       First: Get yourself a coupon holder. I always get mine at the Dollar Tree store... they are a buck and honestly it works for me. I buy it- then go thru the grocery store I frequent the most and label the holders slots in the order of that stores isles. Some people use those binders with "baseball card' type pages, I like that idea too~ But I don't have much info on it- as I don't use that method.
    Second: Know your coupons. I try to go thru my holder about every 2 weeks - weeding out ones that have expired and making a pile of ones that will expire before the end of the week or the following week. That way a good coupon that I would use won't go unused. Plus going thru them might help you remember that you "have" a coupon for something in particular when you see it on sale.
    Third: Get registered. Register your self on the Grocery stores website- if you can. They might have a newsletter that gets emailed to you, I get one once a month and it always has at least 2 printable coupons, usually 5 $ off 50$, or 2$ off any produce purchase... not too shabby
    Fourth: Look on line for coupons, even just googling "printable coupons" will get you to where you need to be. I wouldn't do this at work though.....do it from your home PC.
    Fifth: Email companies, retailers..let them know you like their products, they love compliments, I assume that they get hundreds of complaints a day.. A compliment is sure to stand out and maybe get a coupon landmailed to you!

Growing up, my mom always said, 'Figure 10$ per bag" meaning if you spent 50 bucks- you should have at least 5 bags of groceries. Recently my mom said it is more like 15 now... but I still try to out do that most of the time I do. Coupon shopping has to be almost a way of life.. I carry that coupon holder everywhere. I have a slot for Take out and Mass retailer store also. B knows if he wants to go out to eat he asks me first, Do you have a coupon for Damons?.... which by the way- you should go to the restaurants websites also and see if they have a "club" you join for free- alot of them here in Central Pa do- and they send you certain coupons thru email on your birthday and thru the year.

Burger or Hotdog buns

Okay - this Saturday I want to make cheesesteak sandwiches, then realized I was out of rolls- all we had was bread. Well I can not eat a steak sandwich on bread.. I had already been out for like 4 hours.I had driven to my mother's than to Ross's then to Walmart, then back to my mother's ... all with the 2 kids. Anyone who knows my kids will know what this trip entailed... Nonstop - I mean literally nonstop talk from the 4 year old, even when he has nothing to say, he just starts to recite commercials or cartoons from memory or what ever swearword I have inadvertently said at a passing driver...and the 11 year old wanting to take his DS into every store dodging huge displays and only clearing half of them... the thought of making my own sandwich rolls seemed easier than going back to a store - trust me... I love my kids but taking them into a store, makes the challenges on Survivor or FearFactor look easy. So - here is the recipe that kept me out of a store Saturday evening:

Rolls:
1 Cup Milk
1/2 Cup Water
1/4 Cup Butter
4 1/2 Cup All purpose flour
1 pack of Yeast
2 Tablespoons Sugar
1 1/2 Teaspoons salt
1 Egg

In a small sauce pan heat the milk, water and butter on med heat until 120 degrees, not boiling like I did so that you have to wait 25 minutes till it actually comes down to 120 degrees. 120 degrees is what this needs to be so that it can make the yeast react and not kill it.
In a large bowl mix the flour, yeast, sugar and salt. Mix the milk mixture into the flour mixture and then add the egg. Stir in the remaining flour half a cup at a time. By the time you get to the end of the flour you are gonna have biceps that are screaming- ignore it, this is good for you! Once the dough has pulled together~ meaning you try to stir it and it is one big mass, turn the bowl on it's side and dump the dough onto a floured surface. Knead the dough for like 8 to 10 minutes- I did for 12 minutes but only cause I had my Ipod hooked up to this really cool stereo thingy and I could listen to all my cool music and I wanted to get thru my Alicia keys song.
Divide the dough into 12 equal pieces, shape into smooth balls and place on greased baking sheet, flatten slightly and cover, let rise for 30 to 35 minutes.
Bake at 400 degrees for 10 to 12 minutes- I baked mine for more like 15 minutes.
For Hotdog buns shape each piece of dough into a 6x4 rectangle Starting with the longer side, roll up tightly and pinch edges and ends to seal. Let rise for about 20 to 25 minutes.. I made 15 of these I could have gotten about 18 I bet- but hey.. trial by error right? Either way these were very good and the kids and B loved them! give'em a try!
