1/2/09...Menu Plan for the next few days and the actual recipes!

Okay, I realize most people do a menu plan for the week, starting Monday ending Sunday. I am not doing that this week, I want to get my Menu down Saturday to Friday. Since I have the time right now, I am doing it right now.....

Saturday 1/3/03~ Left Over Ham Potpie and/or Left over Pork and Sauerkraut
Recipe:

Ham Potpie:

Cook ham bone in water to make broth, skim off fat and add the meat pulled from the bone. Season with salt, pepper,and a bay leaf. bring to a slow boil. Add sliced carrots, celery and potatoes. You will have to eyeball this depending on how much broth. Add the pot pie and cook at near boil for 20 minutes or until pot pie is cooked through.

Pot pie dough
3 eggs,slightly beaten
1/2 cup milk
1/2 tsp salt, more or less to taste
1/2 tsp baking powder
flour to make a stiff dough

Roll dough to 1/4 in thickness and cut into squares( a pizza cutter works great for this)You can be generous with the flour when you roll as this will thicken your broth a bit. Drop squares of dough into hot broth stirring after adding every 12 pieces or so to prevent sticking together.
This will puff up quite a bit so be sure you have enough room in your pot.



I usually have either a Ham Hock or even just pieces of a Ham steak if the Boys "need" the potpie that night for dinner
If it is the ham hock - or hambone- i put it in a stock pot with water LOTS and /or chicken stock, add any veggies and seasonings you like- I added celery seed, pepper, salt, lots of chicken bullion, sometimes Bells seasoning.. I just keep adding and tasting ...
Plus i know the recipe looks like you will have too much- but you don't! i have made this for me DH and the two little ones and have only had enough left over for DH to take to work not me

I have made these noodles with Chicken too - same theory

I can not tell you how many times my Brian has bragged about "my ham potpie"

Ribs in the Crockpot with BBQ Sauce
Recipe:
I think that what I am going to do here is just defrost the ribs I have in the freezer, and place them in the crockpot with a Bottle of BBQ sauce on low for 6 to 8 hours More than likely the Sweet Baby Rays brand I have in the Cupboard.

Monday 1/5/09:
Hamburgers, French Fries and Green Beans

Yes I know real original but hey~ it is the first day back to work after 2 weeks- I am gonna need to really use a no-brainer!

Tuesday 1/6/09:
New recipe Alert!!!!!
Sesame Tilapia, Veggies and RIce

Recipe:
1/2 Cup Panko bread crumbs
1 Tbsp Sesame Seeds
1 Egg
8 oz of Tilapia Fillets
3 Tbsps Asian seasoning Mix (pampered chef brand)
2 Tbsp Oil
Mix Bread Crumbs,sesame seeds. Lightly beat eggs, Coat eggs with Asian seasoning mix, dip in egg then into Panko mixture.

Place on Lined Cookie Sheet and Bake at 400 for 25 to 35 min till browned.
Make rice according to directions and serve either over the rice or as a side.



Wednesday 1/7/09:

New Recipe Alert!!!!!!!!
Korean-Style Beef Bowl with sesame noodles

recipe:
2 green onions with tops
1 lb skirt steak
2 cloves garlic pressed
1 tbsp sesame oil
3 Tbsp soy sauce
1 tsp coarse black pepper
1 tbsp sugar
1 tsp oil
for the steak and marinade, slice the green onions and add to large mixing bowl.Cut the Steak in thin slices against the grain. Add to the mixing bowl. Add the pressed garlic,soy sauce, Sesame oil, black pepper and sugar and mix well. Cover, place in fridge and make noodles
bowl spaghetti noodles~ any kind you have... once done, drain and then add soy sauce and sesame seeds. Toss to coat.
Remove steak from marinade, brown steak in non stick pan in oil in a single layer turning once making sure meat is no longer pink inside.
serve with or over noodles.


Thursday 1/8/09:
Spaghetti with Garlic toast and corn
Once again- not very original... but- the last 2 recipes who knows how the family will react, I better choose an olde stand by!

Friday: 1/9/09:

I am pretty sure we are taking Cara out to eat since we missed her birthday.... not on purpose mind you she was at the Rose Bowl!!!! So I get the night off!!!
