Okay I know I haven't written anything in a loooonnngg time- since like June. But I am sure noone has really missed my posts have they? I don't get many comments :) Anyway, is it just me or did Summer just kinda poof into thin air? August has been kind of a haze, our youngest was very sick and then we had a family reunion which involved a spagetti eating contest then Ag progress days (heaven forbid we don't go out and look at the cows!) now all the sudden, we have Labor day!
Oh well- I love Fall the food the weather the planning for the holidays.
I thought that I would post one of my favorite side dish recipes, I use it all the time and the kids and B love it:
Homemade Rice a Croni
(i didn't want to rip off the rice a roni thing....)
1 1/2 cup of rice
enough broken spagetti pieces to make a cup
4 cups of water
1 tablespoon of butter
2-3 tablespoons of soupbase or 2-3 bullion cubes
dehydrated soup greens if ya have'em (I get mine in belleville at Peights.. although I started making my own with the abundant tiny green peppers from the garden)
Melt butter in large frying pan and saute the rice and noodles until they are slightly browned on meduim heat, stir these alot- don't walk away from them either- they burn fast and then you will cry that you wasted all that good rice! Turn the overhead fan of your stove on high (just do it) Once the rice and noodles are browned, slowly pour in the 4 cups of water and add the soupbase or bullion, see aren't you glad you turned on the overhead fan? it smokes up and sizzles pretty good at that point... Ok now bring it back up to a simmer for about 10 minutes or so, turn down to low and put a lid on it for atleast 15 -20 minutes you can check it to make sure it hasn't burned thru all the water, but 4 cups shoud be fine.
I serve this with chicken normally but last night we had steaks on the grill and it was just as good.
I am gonna try to keep up with this blog thing- I have been reading other blogs across the web and man they are involved!
